ELMSFORD, N.Y. -- There's a lot brewing at Captain Lawrence in Elmsford -- and it's not just beer.
Chef Joseph Smith, a New York native known for utilizing locally sourced ingredients, has joined the team, bringing with him a wide culinary range and an astute understanding of how to best pair beer with food.
A new series of beer dinners is among the first things on his plate (no pun intended) with the first one slated for Thursday, Dec. 8.
Smith, who previously worked at The Ram’s Head in Long Island, among other eateries, is known for his ability to build and lead a team, and that's a big part of his mandate at Captain Lawrence. Until recently, the brewery has had food service for its beer hall handled by outside vendors.
“When we made the decision to expand our kitchen, we knew it was also time to bring on a chef who could develop a food program that would keep up with, and compliment our diverse portfolio of beers,” said Captain Lawrence Brewing Co. Founder Scott Vaccaro.
“It was a natural fit to bring Joe onto the team, and we are very pleased to have him around," he added.
“Joe’s appreciation of ingredients and craft mirrors what we do in the brewhouse. "Having him creating a menu that emphasizes local ingredients, and pairs perfectly with our beers is exactly what we were after.”
And that includes the new monthly beer pairing dinners. The menu for each will begin with a selection of hops from Captain Lawrence’s portfolio, around which Smith will craft a menu designed to accentuate and compliment each brew, course by course.
